Wedding

So I had the most wonderful opportunity to go home to Idaho BY MYSELF to attend one of my very best friend's wedding.

She looked so beautiful and the whole week was so great. I arrived on Wednesday night and Annie was able to come and get me from the salt lake airport so amid the chaos of planning a wedding we were able to talk and hang out by ourselves for a short period of time. It was a lot of fun.

Annie asked me to make her wedding cake so first thing Thursday morning I got together with my sister-in-law shayna and planned the things we needed to buy and got to work on the cake. It was so much fun to work with her ( I learned so much!!!Thanks Shayna) and to be able to work on such a masterpiece without children running around at my heels. What an experience! It was my first wedding cake and I think it turned out really great. Sorry I forgot to turn this picture and I am in a hurry so here it is.

We did three flavor all with fillings and she wanted it off white with this green ribbon and little scattered pearls. (oh, by the way I did not do the flowers. They are absolutely beautiful but I would not have put as many on) So the bottom layer was chocolate with a fudge filling. It was a challenge because I had never baked a round cake that big before and I had to cook each pan separately because they would not fit in the oven at the same time so it took like over two hours just to bake that cake. I was really worried about it but I guess it was really good. The next layer was Carrot cake with a white chocolate cream cheese filling. and the top layer was white cake with raspberry filling. This was the first time that Shayna or I had made fondant from scratch (Thanks kindra, You are wonderful. That was such a great recipe) the fondant was easy to roll and the only challenge was making each batch the same color as the one before. It was such a great experience all in all we probably spent about 15 hours on that cake. It was a lot of fun.

She is so stinking beautiful. Congratulations Annie!! I love you!!!!!!!!

After all the wedding fun was over I got another whole day to see my family before Ihad to go home. It was really neat to get to sit and hangout with them without the kids because I got to relax and act like I was a daughter and sibling instead of a mom for one day. Those moments with your parents when you get to just have precious time with them is so amazing and I loved every minute of it. It was certainly nice to get home and see my kids and husband I missed them but it was a wonderful trip!
